I can promise you that homemade vanilla bean whipped cream is a 10000% times better than store-bought whipped cream in a can! And not only is it delicious, it's incredibly easy to make. You only need 3 simple ingredients, and it takes just a few minutes to whip up (literally).
I'm so used to making a batch of whipped cream (I'm a big time dairy girlie), but remembered some people have never made whipped cream from scratch before!
You only need a bowl, a handheld mixer or stand mixer, and three ingredients. That's it! I originally used this vanilla whipped cream to top my mini strawberry snack cake and no bake vanilla bean cheesecake, but it's a recipe you should always have in your back pocket.
If you want a more stable frosting, try my cream cheese frosting recipe without butter or mascarpone whipped cream frosting.
Grab your 3 key ingredients!

- Sugar: I'm using granulated sugar, but you can use an equal amount of powdered sugar if that's what you have on hand. I know some bakers prefer one over the other!
- COLD Heavy Cream: You gotta make sure that heavy cream is cold, people! That's how it thickens up. You can also use heavy whipping cream. We want to use something with 36%+ fat in it. More fat = more stable.
- Vanilla Bean Paste: A little goes a long way with vanilla bean paste! Think of it as the more intense version of vanilla extract.
How to Make Whipped Cream

Step 1
Place all the ingredients in a bowl. With a handheld mixer or a stand mixer with the whisk attachment, beat until you have medium peaks. If you whip too much, it will curdle! Add a drizzle more of cold heavy cream if that happens and fold with a rubber spatula to fix that issue.
Vanilla Beans, Vanilla Bean Paste, or Vanilla Extract? 🤔
I know not everyone is going to have vanilla bean paste in their pantry, so can you use whole vanilla beans or vanilla extract instead?
Yes! You can easily swap out vanilla bean paste for the other two options. If you're using vanilla extract, the whipped cream won't have those little flecks, so keep that in mind.
If you have whole vanilla bean pods at home (lucky you), you'll need to scrape them. Place a vanilla bean pod on a chopping board, and use the tip of a knife to slice it lengthwise. Scrape the inside of the pod with the knife, and add what you scraped out into the mixing bowl.
Stabilizing Whipped Cream
One issue a lot of people have when it comes to making whipped cream is stabilizing it, so you don't end up with sad, deflated cream when you're ready to serve your dessert! Womp, womp.
When testing different whipped cream recipes, I have found that as long as I keep it in the fridge and only bring it out when ready to serve, I'm good to go. If your kitchen is warm, I recommend placing your bowl in the fridge for a few hours before starting the recipe.
But, I know some people live in warmer climates than me or want to use whipped cream to fill or stack a dessert, versus just using it as a topping.
Add 1 tablespoon of skimmed milk powder (this is what I did with my chocolate whipped cream frosting!) for every cup of heavy cream to help stabilize it.
If you're looking for more of a true frosting recipe that you can pipe on to cakes or cupcakes, I recommend using my whipped cream frosting recipe without butter, which uses cream cheese to stabilize it. Just swap out vanilla extract for vanilla bean paste!
Storage
I recommend using the vanilla bean whipped cream topping immediately. If not using right away, place in an airtight container in the fridge for up to a day.

- Swap out vanilla ice cream for vanilla bean whipped cream with blueberry and apple crumble or strawberry and apple crisp!
