There is truly nothing better than an apple oat crumble pie! Easier than an apple pie with a lattice, this classic apple pie comes together in just a few steps. It is basically obligatory to serve with a big scoop of vanilla ice cream!
While it might be apple picking season, I love that apples are a year-round fruit that I can use for baking! Just like my apple pie cinnamon rolls, this apple oat crumble pie is loaded up with apple flavor!
Also known as a Dutch apple pie or apple crumb pie, this pie has a filling of sweet cinnamon apples that is topped with a crunchy oat streusel. I've baked it in my favorite flaky crust recipe but you can use a store-bought pie crust too!
What I love about an apple crumble pie recipe is how easy it is. No fussy lattice to worry about and it's so simple to make. If you want a mini version of this pie, check out my mini apple pies with puff pastry!

Ingredients Needed
- Apples: You'll need about two pounds of apples. I used Granny Smith because that's my favorite to bake with but you can also use Fuji apples or Honeycrisp apples.
- Apple Cider Vinegar: A lot of recipes will use lemon juice, but after watching a Claire Saffitz video on apple pie I loved how she used apple cider vinegar to try and incorporate more apple elements! You can swap it out for lemon juice if you prefer.
- Spices: All the warm spices here! I've got cinnamon, nutmeg and cloves. You can also add a pinch of cardamom!
- Flour: You'll want to use flour or cornstarch to thicken up the apple pie filling.
- Unsalted Butter: I'm using unsalted butter for both the filling and the streusel topping.
- Oats: Make sure you use rolled oats or old-fashioned oats. I don't recommend using quick oats, that will make the topping really powdery.

Step by Step Instructions
Step 1: In a large bowl or jug, mix together all of your oat crumble topping ingredients. Smoosh the butter with your hands until the mixture is evenly moist. Place in the fridge and then preheat the oven to 400ºFahrenheit.
Step 2: Peel and slice the apples into half-inch wedges. Place the sliced apples in a large bowl with the spices, vanilla extract, apple cider vinegar, flour, salt, and light brown sugar. Toss until evenly covered.
Step 3: Pour the apple pie filling into your prepared pie dish. This can either be a store-bought pie crust or a homemade one, you just want it to be crimped and very cold!
Step 4: Dot the tablespoon of butter over the apples. Take the oat crumble out of the fridge and sprinkle on top of the pie. Bake in the preheated oven for 20 minutes, then turn the temperature down to 350ºFahrenheit and bake for another 50-60 minutes.
I recommend placing a pie crust shield on the pie after the first 20 minutes. It's ready when the top is brown and you can see the apples bubbling below. Let the pie cool for 3 hours before enjoying!
Expert Tips & Tricks
- Apple Slices: Try to make sure your apple slices are the same thickness, that way they cook evenly in the oven and you have tender apples.
- Layer the Apple Slices: Instead of just dumping all the apple slices in the pie, I recommend using your hands to layer them so the pie is evenly covered with the slices and there are no large gaps.
- Caramel Dutch Apple Pie: Make this a caramel Dutch apple pie by adding a ½ cup of salted caramel sauce to the filling or by just serving with a generous drizzle of salted caramel sauce on top of the baked pie!
- Covering the Topping: Keep an eye on the oat crumble topping in the oven. If it's getting too brown you can loosely cover the pie with tin foil.
Recipe FAQs
You want to use apples that hold their shape and are a bit tart, which is why I love Granny Smith apples for pie baking. You can also use Gala apples, Fuji apples or Honeycrisp apples.
This apple oat crumble pie is baked in a pie crust, while an apple crumble doesn't have a pie crust or base.
The oat topping will be golden brown and you should see some of the juices bubbling below.

Apple Filling
- 2 lb Granny Smith Apples
- ½ cup light brown sugar
- ¼ cup flour
- 1 teaspoon ground cinnamon
- pinch ground nutmeg
- pinch ground cloves
- 1 tablespoon apple cider vinegar
- ½ teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter cubed
Oat Crumble
- 1 cup all purpose flour
- ¾ cup old fashioned oats
- ½ cup light brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon kosher salt
- 10 tablespoons unsalted butter cold
Instructions
Pie Crust
- If you're using a store-bought pie crust, keep it in the fridge. If you're making a homemade pie crust, follow the instructions on my homemade pie crust until step 9.1 unbaked pie crust
Crumble
- In a medium bowl or jug, mix all of the crumble ingredients together until there are no more floury spots. I recommend using your hands to do and squishing the pieces of butter with the dry ingredients until everything is moist. Place in the fridge.1 cup all purpose flour, ¾ cup old fashioned oats, ½ cup light brown sugar, 1 teaspoon ground cinnamon, ½ teaspoon kosher salt, 10 tablespoons unsalted butter
Apple Pie
- Preheat your oven to 400℉/200℃.
- Peel and slice the apples into half-inch wedges and place in a large bowl. Mix with the brown sugar, spices, flour, apple cider vinegar and vanilla. Toss until the apples are evenly coated.2 lb Granny Smith Apples, ½ cup light brown sugar, ¼ cup flour, 1 teaspoon ground cinnamon, pinch ground nutmeg, pinch ground cloves, 1 tablespoon apple cider vinegar, ½ teaspoon kosher salt, 1 teaspoon vanilla extract
- Pour the apple pie filling into the crimped pie dish. Use your hands to make sure you have an even layer of apple slices in the unbaked pie.
- Dot the top of the apples with the butter.1 tablespoon unsalted butter
- Take the oat crumble out of the fridge and sprinkle it on top. It's a lot of streusel but it cooks down!
- Place on a baking sheet in the middle of the preheated oven and bake for 20 minutes at 400℉. Turn the temperature down to 350℉/175℃ and bake for an additional 50-60 minutes. I recommend placing a pie shield on the crust after the first 20 minutes, and also covering the top of the pie with foil if the crumble gets too dark.
- Let the pie cool for at least 3 hours before slicing and serving.
