These cinnamon mini muffins are brushed with melted butter and dipped in cinnamon sugar! These little mini muffins are irresistible; you seriously can't stop at just one. They're made in one bowl, and you don't need a mixer to make them!

Every holiday season growing up, my mom would make these little cinnamon sugar maple muffins with streusel. I can still picture what they taste like! These mini cinnamon muffins are a riff on those.
They're dunked in melted butter and then rolled around in homemade cinnamon sugar. These bite-sized mini muffins are perfect for holidays, brunches, or even just to have on hand. When testing this recipe, I used the same muffin base as my cinnamon swirl muffins. I did, however, reduce the amount of baking powder. Unlike regular muffins, we don't need a huge amount of lift in the muffin tops with cinnamon mini muffins!

Only 12 Ingredients!

- Buttermilk: Buttermilk is going to keep these muffins extra moist!
- Oil: Use a neutral oil like sunflower oil or vegetable oil.
- Butter: We'll need some unsalted butter to brush the warm mini muffins with.
- Sugar: You'll need sugar for both the muffins and the cinnamon sugar coating.
Let's Make This Recipe!

- Step 1: Whisk all the wet ingredients together.

- Step 2: Add the dry ingredients and stir together. It's ok if there are some lumps!

- Step 3: Grease a mini muffin pan. Add the muffin batter so they're ¾ full. Bake in the oven.

- Step 4: Let cool for 10-15 minutes. Brush the warm muffins with melted butter and then roll in cinnamon sugar.

My Tips, Tricks, & More!
- Brushing with Butter: When I was testing this recipe, I found that brushing the mini muffins with the melted butter was better than dunking them straight into the butter. If you dunk them, they get too saturated. They're more likely to fall apart or get soggy.
- Need Less Muffins? If you don't need 40 mini muffins (understandable!), you can halve the recipe.
- Storage: Because these cinnamon mini muffins are brushed with melted butter, they're best eaten on the day they're made. If you need to store them, you can place them in a bag, but don't close it (I've found they get soggy if the bag or container is closed!)

Cinnamon Mini Muffins
Equipment
- 1x mini muffin pan
Ingredients
- 2 large eggs room temperature
- 1 tablespoon vanilla extract
- 1 cup (227 ml) buttermilk room temperature
- 1 cup (200 grams) granulated sugar
- ½ cup (100 ml) neutral oil
- 3 cups (360 cups) all-purpose flour
- 3 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 1 teaspoon ground cinnamon
- Pinch ground nutmeg
Cinnamon Sugar Topping
- 4 tablespoons (56 grams) unsalted butter melted
- ½ cup (100 grams) granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- In a large bowl, whisk the eggs with the oil, buttermilk, sugar, and vanilla extract.2 large eggs, 1 tablespoon vanilla extract, 1 cup (227 ml) buttermilk, 1 cup (200 grams) granulated sugar, ½ cup (100 ml) neutral oil
- Add in the flour, baking soda, baking powder, cinnamon,nutmeg, and salt. Stir together until just combined with a rubber spatula.3 cups (360 cups) all-purpose flour, 3 teaspoons baking powder, ½ teaspoon baking soda, ½ teaspoon kosher salt, 1 teaspoon ground cinnamon, Pinch ground nutmeg
- Preheat the oven to 350°Fahrenheit/175°Celsius. Grease a mini muffin pan.
- Scoop out the muffin batter into the liners so they're just over ¾ full.
- Bake the muffins for 12-14 minutes.
- Let the muffins cool in the pan for about 5 minutes before removing to a wire cooling rack to cool slightly.
- In a shallow bowl, whisk the sugar and cinnamon together.½ cup (100 grams) granulated sugar, 2 teaspoons ground cinnamon
- Brush each muffin with melted butter.4 tablespoons (56 grams) unsalted butter
- Roll or dip the mini muffin in the cinnamon sugar. Enjoy!
