Turtle Pie

This is a no bake turtle pie with a salted caramel cream cheese filling, Oreo cookie crust, and it's topped with caramel pecans and whipped cream!

Step 1: Mix Oreo cookie crumbs with melted butter. Pour into a 9-inch springform pan. Press into the pan then freeze for 20 minutes. 

Step 2: In a large bowl with a handheld mixer or in a stand mixer, whisk the heavy cream until you have stiff peaks. Set aside.

Step 3: In a stand mixer, beat the cream cheese until smooth. Add salted caramel, confectioners' sugar, sour cream and vanilla.

Step 4: Gently fold in the whipped cream, you want to do this gently so you don't deflate the whipped cream! This is going to make it so light. 

Step 5: Pour into your chilled Oreo crust. Use an offset spatula to smooth the top. Cover with plastic wrap and chill overnight. 

Step 6: Just before serving, mix the pecans with the remaining salted caramel sauce.

Step 7: Spoon the caramel pecans over the pie. Drizzle melted chocolate on top. 

Step 8: Pipe the edges with homemade whipped cream and enjoy!
