The Best Carrot Cake Recipe

Whisk together oil, eggs, sugar, spices, salt, baking soda and vanilla

Fold in the flour, carrots and nuts. Pour into 2 cake pans and bake.

In a chilled mixing bowl, whisk heavy cream, salt, sugar and vanilla. 

Add the cream cheese a tablespoon at a time. Whip on high speed.

Frost the cake and sprinkle over chopped nuts.
