Strawberry Topping for Cheesecake

In a medium saucepan, combine diced strawberries, lemon juice, lemon zest and sugar.

Heat over low heat for 25-30 minutes, until the strawberries break down and create a thick jam like sauce.

Take off the heat and let cool completely, then pour into a large jar or airtight container and store in the fridge.

Use the strawberry preserves as a cake filling, as pictured below, or to fill cupcakes or spoon over cheesecake!
