Strawberry Blueberry Pie

Make your pie dough. Whisk together flour, sugar and salt.

Add sliced and cubed butter and toss in the flour. Smoosh the butter with your fingers. 

Drizzle over ice water and continue tossing until you have a shaggy mass of dough.

Divide into two discs and wrap in plastic, chill for at least 2 hours. 

Place strawberries and blueberries in a bowl. Sprinkle over half the sugar and the lemon juice.

Leave it for up to 4 hours, the sugar pulls out the extra water from the fruit so your filling isn't runny!

Pour the juices into a pan and bring to the boil. Boil until you have 3 tbsp of thick syrup (about 10 min)

Pour this syrup over the fruit and add the remaining filling ingredients.

Roll out your pie dough and place in a 9" pie plate. Crimp and place in fridge for 15 minutes. 

Roll out other disc of dough and cut out shapes. Fill chilled pie plate with filling and top with cut outs. Bake!
