Pumpkin Custard Pie

Parbake your pie dough, either homemade or store bought. You want the bottom to be golden brown! 

Whisk eggs with brown sugar, white sugar and vanilla extract.

Add the pumpkin puree, nutmeg, ginger, cinnamon and salt until smooth.

Whisk in the heavy cream and sour cream until smooth.

Pour into the partially baked crust, tap to remove air bubbles and bake.

Let the pie cool completely, then cover with whipped cream and pie crust cookies.
