Lemon Squares Recipe

Crush your graham crackers in a food processor. Preheat oven to 375 degrees.

Pour in your melted butter, salt and light brown sugar and pulse until all the crumbs are moist.

Pack down crumbs in an 8x8 pan. Bake for 15 minutes and let it cool.

In a saucepan, whisk together half your sugar, lemon juice and zest, salt and cornstarch.

Whisk your eggs, egg yolks and rest of your sugar in a bowl.

Pour in half of your hot mixture into the eggs, whisking constantly. 

Pour the egg mixture into the saucepan and whisk until very thick. Add your butter.

Pour the lemon curd filling into the pan and bake at 300 for 30 minutes. 

Chill the bars for 3 hours, then sift over confectioners' sugar on top.
