Lemon Poppy Seed Cupcakes

Step 1: Whisk sugar with lemon zest. This releases the lemon oil, giving you a stronger lemon flavor.

Step 2: Add butter and oil, mix until light and fluffy. Adding some oil with make your cupcakes soft!

Step 3: Mix in eggs, vanilla extract, lemon extract and lemon juice. 

Step 4: In a separate bowl, whisk all of the dry ingredients together. 

Step 5: Add the dry ingredients and buttermilk to your cupcake batter. 

Step 6: Fill your cupcake liners 3/4 full and bake in the oven. 

Step 7: While the cupcakes cool, make the frosting. Combine butter and powdered sugar. 

Step 8: Add vanilla extract, lemon juice, salt and poppy seeds. 

Step 9: Pour in heavy cream and mix until you have the consistency you want.

Step 10: optional, but core out the cupcakes and fill with lemon curd!
