Lemon Curd Muffins

Whisk or massage the lemon zest with the sugar to create lemon sugar. 

Pour the lemon sugar into a large bowl and add melted butter, yogurt, and 1 egg.

Add all the dry ingredients to the wet and fold until smooth.

Scoop the muffin batter into liners and bake for 22-25 minutes. 

As soon as they're out of the oven, brush the muffin tops with lemon curd.

Use a piping bag or squeeze bottle to fill the muffins with lemon curd.
