Lemon Blueberry Cookies

Use your hands or a food processor to mix lemon zest with sugar to create lemon sugar.

Add softened butter and cream until extra light and fluffy.

Scrape down the bowl and add an egg, lemon juice, lemon extract and vanilla.

Mix in flour, baking soda, baking powder and salt. Stir in the blueberries.

Scoop out 3 tablespoons of dough and add extra blueberries. Roll in sugar.

Bake the cookies in the oven, add some extra lemon zest after baking for an extra lemon kick!
