Gnocchi Carbonara

Whisk egg yolks with some parmesan and black pepper.

Heat up some oil in a large pan and fry up pancetta or bacon bits.

Cook your gnocchi according to your package instructions.

Add the gnocchi to the large pan with the pancetta.

Add a little bit of the gnocchi pasta water to the sauce and whisk until smooth.

Slowly pour in the sauce into the gnocchi, stirring constantly until you have a thick sauce.
