Cranberry Lemon Bread

Slice up fresh cranberries and toss in flour. Set aside. This is to help them not sink in the loaf when baking.

Whisk together flour, salt and baking powder in a bowl. Set aside.

In a food processor, blend sugar with lemon zest until the sugar turns pale yellow.

Add eggs, melted butter, sour cream, vanilla extract and lemon juice.

Pour the wet ingredients into the dry and fold, then stir in the cranberries. 

Pour into a loaf pan and bake for 80-90 minutes. Let it cool completely.

Top with a simple glaze or frosting and sugared cranberries.
