Chocolate Cake with Strawberry Filling

In a large bowl, whisk together cocoa powder with flour, sugar, baking soda, baking powder and salt.

In another bowl, whisk the wet ingredients together until smooth. 

Divide the cake batter into 3 cake pans and bake. 

Make the buttercream. Whisk egg whites with sugar and place over a saucepan with some simmering water. 

Whisk until the mixture gets to 140 degrees, and it turns to a white opaque. 

Move the bowl to a stand mixer and whisk for 10-15 minutes until you have stiff peaks. 

Switch to a paddle attachment and add butter a piece at a time. 

Add melted chocolate and mix until smooth. 

Assemble the cake, placing strawberry jam in the middle and cover with frosting.

Decorate with fresh strawberries!
