Carrot Cake Cupcakes

Whisk together oil, eggs sugar, vanilla extract, spices, baking soda and salt. 

Fold in your flour until the batter is smooth. 

Fold in your shredded carrots and chopped walnuts. 

Divide evenly into 12 cupcakes liners and bake! 

Whisk your heavy cream with your sugar, vanilla and salt until the sugar dissolves. 

Whisk on high until it looks like thick yogurt. Add in your cream cheese and whip again until thick.

Frost each cupcake with your cream cheese frosting and decorate with sprinkles or Easter candy!
