Brown Butter Snickerdoodles

Melt your butter in a saucepan, stirring until it starts to brown. Take off the heat and chill in the fridge for 1 hour until solid.

Whisk flour, baking soda, cream of tartar, salt and cinnamon in a medium bowl.

Take your solid brown butter and cream it with sugar and light brown sugar until light and fluffy.

Add the egg, egg yolk and vanilla bean paste. Beat for 1 minute. 

Add the dry ingredients and beat on low until just combined.

Whisk sugar and cinnamon together in a small bowl. 

Scoop out the cookie dough into balls and roll in cinnamon sugar.

Bake for 9-10 minutes until slightly puffed with cracks.
