Blueberry Lemon Coffee Cake

Step 1: Whisk all of the crumb topping ingredients together, then place in the fridge.

Step 2: In a large bowl, whisk the flour with the baking powder, baking soda and salt.

Step 3: In a stand mixer or with a hand mixer, cream the butter with the sugar.

Step 4: Add the egg, vanilla extract and lemon extract.

Step 5: Mix in the sour cream and lemon zest.

Step 6: Pour in the dry ingredients and mix until just combined.

Step 7: Mix the blueberries with cornstarch and lemon zest.

Step 8: Gently stir in the blueberries into the coffee cake batter.

Step 9: Pour the coffee cake batter into an 8x8 greased baking pan.

Step 10: Sprinkle over the crumb topping and bake in the oven !
