Blackberry Lemon Bread

This lemony blackberry loaf cake is made with lemon zest, lemon juice, and fresh blackberries. This is a very simple recipe to make and is so delicious!

Chop up your blackberries into small pieces and toss with flour. This will help them not sink!

Whisk together all purpose flour, salt and baking powder. Set aside.

In a food processor, blend your sugar and lemon zest together. This helps release the lemon oils, giving more lemon flavor!

Add in 3 eggs, melted butter, sour cream, lemon juice and vanilla extract. Blend until smooth.

Pour the wet ingredients into the dry and fold everything together. Add in your chopped blackberries.

Pour batter into a prepared 4.5x8.5 inch loaf pan and bake for 80 minutes.

Create a pink glaze by blending 4 blackberries, then pouring that into a bowl with confectioners' sugar, lemon juice and heavy cream.
