Banana Oat Muffins

Mash your bananas in a large bowl. Add your egg, sour cream, light brown sugar, vanilla extract, and melted butter.

In another bowl, whisk the flour with toasted oats, baking powder, baking soda and salt.

Pour the muffin batter into a mini muffin pan, then bake for 12-14 minutes.

If you wish, you can bake in a regular muffin pan for 25-30 minutes to make regular sized muffins!
