Apple Crisp Cheesecake

Whisk together oat crisp topping ingredients and place in fridge.

Slice apples thinly and toss with cinnamon and brown sugar. Place in fridge.

Mix graham cracker crust ingredients until moist. 

Press down into springform pan and bake. 

Combine cream cheese with sugar and light brown sugar. 

Add sour cream, vanilla extract and cinnamon. Mix again. 

Add eggs one at a time, mixing on low speed. 

Pour into cooled cheesecake crust.

Place apple slices on top of the cheesecake. 

Sprinkle over the streusel and bake for 60-65 minutes! 

Let cheesecake cool completely and chill overnight before serving!
