Step 1: Pulse Biscoff cookies in a food processor or blender.

Step 2: Add in melted butter and mix until crumbs are moist.

Step 3: Pour into a springform pan and use a measuring cup to pack it in. Place in freezer.

Step 4: Whip heavy cream with a hand mixer or stand mixer until you have stiff peaks.

Step 5: In another bowl, mix cream cheese until smooth.

Step 6: Add powdered sugar, vanilla extract and Biscoff spread.

Step 7: Gently fold in the whipped cream.

Step 8: Pour the filling into the chilled crust. Place in the fridge overnight.

Step 9: The next day, take out of the pan. Melt Biscoff spread and pour over.
